This Ninja Creami Strawberry Ice Cream is an effortless recipe no matter the level of your ice cream-making skills. The Ninja Creami machine gives this bright and fresh strawberry ice cream the velvety smooth texture of old-fashioned ice cream with just the push of a button!
I’m no stranger to using traditional ice cream makers, but I know a lot of people are intimidated by the prospect of using one. With a Ninja Creami machine, you don’t have to worry about making any mistakes – it is absolutely fool-proof! Making homemade ice cream feels much more approachable with this machine.
Ingredient Notes
Fresh strawberries – Nothing beats using fresh strawberries with their aroma and juiciness, but you can use frozen strawberries if that is what’s most readily available to you.
Granulated sugar – You just need plain white sugar – when mixed with the strawberries, it pulls out the fruit juice and makes a syrup.
Lemon juice – Use freshly squeezed if possible. The lemon juice gives just a touch of acid to balance the sweetness and brightens the flavor of the strawberries. Lime juice would also work very well.
Heavy cream and half/half – If you don’t have the half and half, whole milk will do just fine. I wouldn’t recommend changing or substituting the heavy cream in this recipe for the best texture.
Vanilla extract – You can also try other baking extracts like almond extract.
Step-by-Step Instructions
Step 1: Add the strawberries, granulated sugar, and lemon juice to a mixing bowl.
Step 2: Stir everything together so that the strawberries are evenly covered with the sugar. Allow to sit for at least 15 minutes to allow the strawberry juices to release. Then, add to a blender and add the heavy cream and half/half.
Step 3: Add the vanilla extract and blend until completely smooth. Pour into the Creami pint container, making sure to not exceed the max fill line. Cover with its lid and store in the freezer for 24 hours.
Step 4: Secure the frozen pint container into the machine and use the “ice cream” function.
Step 5: If the texture appears clumpy and not smooth (it probably will), then put it back into the machine and use the “re-spin” function 1-2 times.

Variations and Mix-in Ideas
To use the mix-in feature, simply make an indentation in the middle of the ice cream that goes all the way to the bottom of the pint container after you have processed it at least once. Add your favorite mix-ins to the indentation, put the pint back into the machine, and hit the “mix-in” function. Here’s some mix-in inspiration:

Tips
For reprocessing leftovers, use the “re-spin” function ONLY after you’ve already used the “ice cream” function again.
You can use the “re-spin” function as many times as you need to get the texture you’re looking for after your initial process.
For mix-ins, leave things that are soft or crumble easily (like Oreos, pretzels, etc.) whole as the Creami will just continue to make things smaller. For harder things, like nuts or candy bars, chop them before adding them.

Smooth out the surface before refreezing so that it will evenly freeze.
Add a small piece of parchment paper to the surface before putting the airtight lid on the Creami pint to prevent ice crystals from forming.
Place your container in your freezer as far away from the freezer door as possible to prevent freezer burn.
After refreezing, if you want to reprocess, you must again first use the “ice cream” function before using a “re-spin” function.
For the best flavor and texture, consume within 2 weeks.
